Simone also had a personal announcement to share.

Viviana added: “I walked into this challenge with a best friend and came out of it with a brother. I could not be happier.”

Judges Manu Feildel and Colin Fassnidge were joined by guest judge Julie Goodwin, who praised the teams for their skill, bravery and flavour.

Both teams cooked four courses for the grand final — entrée, seafood, meat, and dessert, with 100 plates served.

Simone and Viviana’s menu showcased their respect for their Italian heritage and technical excellence.

Caz and Fergus also impressed the judges with their bold, vibrant dishes.

“I’m incredibly proud of both of us. It was never going to be easy today,” Caz said.

Fergus added: “I wouldn’t have got here without you, Mum. No regrets.”

According to the judges, one of the highlights was Simone and Viviana’s Lobster and Guanciale Taco.

Manu praised its balance, while Colin loved the crunch, calling it “an adventure in every bite.”

Simone, who hails from Italy and is now an Australian citizen, credited his inspiration to the local cuisine.

“Australia introduced us to surf and turf, so we wanted to create this dish,” he said.
