Brilliant Bolognese

Time: 60 minutes

Serves: 4

Ingredients:

1 Tablespoon olive oil

1 large onion, chopped

2 garlic cloves, crushed

500g beef mince

3 Tablespoons tomato paste

200ml red wine

800g tinned crushed tomato

2 bay leaves

2 teaspoon sugar

Salt and pepper

¼ cup milk

Method:

1. In a large deep pan over medium to high heat, add the olive oil, onion and garlic. Sauté until the onion is softened and aromatic.

2. Add the beef mince and break up until evenly browned. Once browned, add the tomato paste, red wine, tinned tomato, bay leaf, sugar and seasoning. Season to taste. Gently simmer uncovered for 45 minutes. If the Bolognese gets too dry add some water.

3. Just before serving, stir in the milk and serve hot with pasta.

Bolognese and Caramelised Onion Pizza

Easy

Time: 15 minutes

Makes 2 pizzas

Ingredients:

2 pizza bases

2 cups of cold Bolognese

2 cups Mozzarella cheese

½ cup caramelised onion

Basil Leaves

Method:

  1. Pre-heat oven to 200 degrees, place the base on an oven tray and add one cup of the bolognese and evenly spread over the base. Evenly spread the mozzarella cheese over the pizza. Dollop small spoonful’s of the caramelised onion on top of the cheese.
  2. Bake in the oven for approx. 7 minutes or until cheese is melted and lightly golden. Top with fresh basil and serve immediately.

Bolognese Rigatoni Pie

Easy

Time: 45 minutes

Serves: 4

Ingredients:

500g rigatoni, cooked

4 cups Bolognese

3/4 cup mozzarella cheese, grated

¾ cup tasty cheese, grated

3 eggs, lightly beaten

2 tablespoons parsley, chopped

1 teaspoon oregano, dried

300g mozzarella, sliced

Parsley chopped to garnish

Method:

  1. Pre-heat a fan forced oven to 180 degrees. Generously grease a 24cm round springform cake tin.
  2. In a large bowl mix the cooked rigatoni, Bolognese, mozzarella and tasty cheese, eggs, parsley and oregano. Mix until well combined. Place into the prepared springform tin. Top with slices of mozzarella. Bake for 30 minute. Take out of the oven and allow to sit for 5 minutes to set. Release the tin and serve immediately with chopped parsley.

Bolognese Con Carne

Easy

Time: 15 minutes

Serves: 4

Ingredients:

2 teaspoons olive oil

1 teaspoon coriander, ground

1 teaspoon chilli powder

2 teaspoons smoked paprika

2 teaspoons cumin, ground

4 cups Bolognese

½ cup kidney beans

½ cup black beans

2 small squares of dark chocolate or 1 teaspoon of cocoa

1 lime, quartered

½ cup sour cream

Coriander

Tortillas or rice or corn chips

Method:

  1. In a large deep pan over medium heat, add the olive oil. Add the coriander, chilli, paprika and cumin. Gently fry for 30 seconds and then add the Bolognese.
  2. Stir in the beans and mix in the chocolate or cocoa.
  3. Serve the chilli con carne in a bowl with your choice of rice, corn chip or tortillas. Add a dallop of sour cream, coriander and lime.
