Salmon patties
Makes 10 – 12
1 cup of almond meal
1 onion grates
2 cloves of minced garlic
1 can (400grams) of salmon
2 eggs
2 spring onions chopped finely
1/4 cup of chopped fresh dill
1 teaspoon of dried parsley
1/2 cup of parmesan
Season with salt and pepper
Method
Preheat the oven to 200 degrees. Add all ingredients to a bowl and mix adding the salmon last. Don’t over mix the recipe.
Make patties that are 2 heaped tablespoons in size or it you want to measure then 1/4 of a cup. Line a tray with baking paper and spray with an olive oil spray. Add the patties to the tray and bake for 20 minutes, turning 1/2 way.
Steam greens of choice. ( Enough to serve 4 )
Serve with tzatziki
1 cucumber chopped
2 minced cloves of garlic
1/4 cup of extra virgin olive oil
500 grams of Greek yoghurt
2 tablespoons of red wine vinegar
Salt and pepper
Add to a bowl and mix well
Garnish with chia seeds and chopped almonds and freshly chopped parsley
