Fresh, flavourful and Fijian … this sensational salmon will be your new favourite dinner

Fuzz Ali is a TV personality, cook and podcaster.

He is best known for appearing on My Kitchen Rules alongside Arrnott Olssen where they were called the “fabulous Fijians”.

Today, Fuzz is making Fijian tamarind salmon.

FIJIAN TAMARIND SALMON

Serves 4

Ingredients

4 salmon pieces (skin off is my preference)

1 tblsp tamarind paste (jars are available in your local asian grocery aisle)

4 tblsp olive oil

1 tsp Fijian curry powder (found at a fiji/pacific market near you. if you don’t live near one, a supermarket curry powder will work too)

1 tsp sea salt

2 tsp monkfruit sweetener (you can use raw sugar)

crushed garlic (to your hearts content)

cayenne pepper (consult your ancestors on this one – i added about a tablespoon)

1 chilli and coriander to garnish

(Optional Fiji Style Chilli Oil)

Method

1. pre-heat your oven to 160c

2. lay out your salmon pieces on a lined banking tray

3. mix all other ingredients in a bowl until combined

4. spoon sauce mixture over salmon

5. bake for 10 minutes then remove from oven and let rest for 5 minutes

6. serve with vegetables of choice (i chose to fry up some okra to go with mine)
