Courtney Roulston’s breakfast burgers | Sunrise

Chef and Coles ambassador Courtney Roulston joined Sunrise to show us how to cook up some delicious burgers with a Matildas twist.

BLOODY MARY FOWLER

  • 1.25L tomato juice
  • 1/4 Worcestershire sauce
  • 1/4 cup olive juice
  • 1/4 cup lemon juice
  • 4 celery stalks
  • Dash of Tabasco
  • Salt & pepper
  • Ice to serve

Mix all ingredients into a pitcher. Add salt and pepper to taste and garnish with celery stalk.

BIG MACKENZIE BURGER

  • 4 Coles Brioche Burger Buns
  • 4 Coles Finest Angus Beef Patties
  • 4 butter lettuce leaves
  • 4 slices Coles Burger Cheese
  • 1/2 white onion
  • 1/4 cup Coles Burger Sauce
  • Pickles to serve

Warm burger buns until toasty. Cook beef patties to liking, melting the cheese on top. Assemble burger starting with sauce, lettuce, beef, onion and top with a pickle.

EMILY VAN EGG-MOND MUFFIN

  • 4 Coles English Muffins
  • 8 rashers bacons
  • 4 free range eggs
  • 4 slices cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper

Warm muffins until toasty. Cook bacon until crispy and fry eggs in oil. Assemble muffin with egg, bacon, cheese and top with Green & Gold Sauce.

GREEN & GOLD SAUCE

  • 1/2 cup parsley
  • 1/2 cup coriander
  • 1/2 cup mint
  • 1 spring onion
  • 1 green chilli
  • 1 lemon
  • 4 tbsp mayonnaise

Add all ingredients to a food processor and blend until a smooth consistency.
