Courtney Roulston dishes up a modern take on meatloaf

Chef and Coles ambassador Courtney Roulston gives old-school meatloaf a modern makeover with a delicious recipe that will be a winner with the whole family.

MEATLOAF WITH TOMATO & POLENTA

*Cheap ingredients to make a delicious meal for Father`s day. I`m serving with polenta but is also good with mashed potato. Leftovers are delicious the next day pan fried in a burger with cheese & pickles or in a toasted sandwich!

Cook time: 1.5 hours

Ingredients

1kg Coles 3 star beef mince

1 cup panko breadcrumbs

Sea salt and pepper to taste

2 teaspoons beef stock powder

1 large brown onion, grated

2 large cloves garlic, minced

2 eggs

1.5 tablespoons Worcestershire sauce

2 tablespoons tomato paste

1/3 cup flat leaf parsley, plus extra to serve

2 tablespoons thyme, leaves picked

700g tomato passata

1/3 cup Parmesan cheese, plus extra to serve

Polenta:

1 cup fine polenta

50g butter

Method

Step 1. Pre heat the oven to 180degrees C. Place the beef mince, breadcrumbs, salt, pepper, beef stock, grated onion, garlic, eggs, Worcestershire sauce, tomato paste, parsley and thyme into a large mixing bowl. Mix well with clean hands until well combined. Shape the mixture into loaf shape then press into a lined loaf tin and smooth over the top.

Step 2. Bake for 1 hour, or until the meatloaf is set. Carefully remove from the loaf tin and place into a high-sided baking tray and cover with the tomato passata. Place back into the oven and cook for a further 20 minutes, or until the sauce is bubbling. Scatter over the Parmesan cheese then set aside to rest for 10 minutes.

Step 3. For the polenta place 4 cups of salted water into a saucepan and bring to a simmer. Slowly pour in the polenta whisking constantly until the mixture thickens. Turn the heat down to low then use a wooden spoon to stir the mixture for about 4-5 minutes, or until smooth. Turn off the heat then stir through the butter and around 1/3 cup Parmesan cheese.

Step 4. Spoon some of the polenta into serving dishes then cut the meatloaf into 2cm slices. Place the meatloaf onto the polenta along with some of the tomato sauce. Grate over some extra Parmesan cheese and scatter with Parsley before serving.
