Sweet and creamy, this Italian-inspired appetiser combines peach with a luxurious cheese from Puglia to create a bruschetta you can enjoy just about any time of day. For the bread, we’ve used Tesco Finest white sourdough, which expert bakers take 24 hours to carefully craft. Its perfect crispness adds a wonderful crunch.

Serves 2
2 tbsp Tesco Finest extra-virgin olive oil
1 large peach, cut into 1cm slices
Tesco Finest white sourdough, four slices
1 garlic clove, peeled
250g Tesco Finest Italian burrata
4-5 sprigs fresh thyme, leaves stripped
2 tbsp Tesco Finest orange blossom honey
Place a griddle pan over a high heat, add 1 tbsp of the oil and then, using tongs, gently add the peach slices, cooking for 3-4 minutes on each side until charred and lightly golden. Set aside, then add the sourdough to the griddle pan and cook until it too is golden and lightly charred on both sides.
Do this in batches if you can’t fit all four slices in together. Remove the sourdough from the pan and rub the garlic over one side of each slice.
In a shallow bowl, gently quarter the burrata then divide across the slices of sourdough. Arrange the peach slices on top and drizzle over the honey and remaining 1 tbsp of oil, then sprinkle with fresh thyme leaves. Season and serve.
